Chocolate
rolls with a ragù of wild berries |
(for
10 persons) The chocolate mousse: 90 g butter,
15 g powdered sugar, 4 egg yolks, 45 ml cherry
liqueur, 200 g white chocolate, 400 ml whipped
cream.

Whip the butter and powdered
sugar until the mixture is foamy. Blend in
the egg yolks and, afterward, the melted chocolate.
Heat the cherry liqueur and add it to the
foamy butter and powdered sugar. Blend in
the whipped cream and refrigerate the mousse
