Thanks to the friendship that
links me with the Rallo family, I was invited to
participate in the fascinating choreography of the
nocturnal harvest at Contessa Entellina.
It is marvelous to see the care with which the harvesters
collect the grape clusters and place them in steel
carts that, as soon as they have been filled, are
rushed from the vineyard to the nearby winery, ready
for the pressing. The objective is maximum flower
must, which preserves all the grapes' scents and
aromas and from which will emerge this great Chardonnay
known as La Fuga. This delicious wine combines with
various dishes, soups and pastas, fish and also
white meats, in my opinion.
